Ⅰ. 서론
생명체로부터 나온 다양한 표본들의 단백질 농도를 알아내고 싶지만, 그러한 정량 分析은 간단하지 않다. 예를 들어, 방향족 작용기, 수산기, 기타 작용기 등의 존재 유무라든가 질소화 황의 함량 같은 것이 중요하다. 세포 추출물은 보통 분자량이 다른 수많은 단백질 분자들이 포함되어 있는 복잡한 혼합물이므로, 단백질의 농도를 몰 단위로 나타낼 수는 없다. 단백질의 화학적 성질은 아미노산 조성에 따라 달라진다.
